HOMINY CASSEROLE 
4 slices bacon
1 green pepper, chopped
1 (29 oz.) can hominy, drained
1 (10 oz.) can tomatoes with green chiles
1 tsp. salt
1 c. shredded cheese
2 lg. onions, chopped
1 (4 oz.) can sliced mushrooms, drained
1 tsp. Worcestershire sauce
1/4 tsp. pepper

Cook bacon in skillet until crisp; drain, reserving drippings. Crumble bacon. Add onion and pepper to drippings in skillet, saute until tender.

Stir in mushrooms, hominy and Worcestershire sauce, tomatoes and seasonings; cook 20 to 30 minutes over medium heat, stirring occasionally. Stir in bacon.

Alternate layers of hominy and cheese in a greased 2 quart casserole, ending with cheese. Bake uncovered at 350 degrees for 20 minutes. Yield: 6 servings.
