EASY NOODLE CASSEROLE 
1 lb. ground beef
1 c. chopped onions
28 oz. can of crushed tomatoes
1 tsp. oregano
3/4 tsp. salt
1/4 tsp. pepper
1 1/2 c. thinly sliced zucchini
1 c. thinly sliced mushrooms
1 1/2 c. wide egg noodles, cooked and drained
4 oz. shredded cheddar cheese

Preheat oven to 350 degrees. In large skillet, brown beef with onions. Drain well. Mix in tomatoes, oregano, salt and pepper. Simmer for 10 minutes, stirring occasionally. Mix in zucchini and mushrooms; cook for additional 10 minutes. Blend in noodles. In 12 x 7 inch baking dish, layer half of meat mixture and half of cheese. Repeat layers. Bake in oven for 15 to 20 minutes.
