EASY RICE CASSEROLE 
3 c. cooked rice
Any leftover vegetables of mixture of your choice or 1 c. broccoli, cauliflower, and carrots (3 c. total)
2 eggs
1 tsp. garlic powder
1 tsp. onion powder
Salt and pepper to taste

Beat eggs well and add dry spices. Add mixture to rice. Fold in vegetables (and meat if desired). Pour into 6 cup greased casserole and bake at 325 degrees for 20 minutes.
