FRESH APPLE CAKE 
2 eggs
2 c. sugar
1/2 c. oil
1 tsp. vanilla
2 c. flour
1/2 tsp. salt
1 tsp. baking soda
2 tsp. cinnamon
1/4 tsp. nutmeg
4 c. peeled, diced apples
1 c. chopped pecans

ICING:

3 oz. pkg. cream cheese
3 tbsp. butter, softened
1/2 tsp. vanilla
1 1/2 c. powdered sugar

Grease and flour 9x13 inch pan. Beat eggs well, and gradually add sugar, oil, and vanilla. Sift next 5 ingredients and add to eggs. Stir in apples and pecans; mixture will be stiff. Bake for 45 minutes at 350 degrees. Let cool 15 minutes on rack, then spread with Cream Cheese Icing.

Blend all ingredients for frosting until smooth and then ice cooled cake. 24 servings.
