BROILED FLOUNDER 
Prepare one flounder per person weighing about 1 1/4 to 1 1/2 pounds each. Score fish on both sides and sprinkle with salt and pepper. Pour juice of one half lemon and Worcestershire sauce over both sides of fish and inside neck opening. Place in broiler white side up, dot with butter and cook for ten minutes. Then turn and dot dark side with butter and broil 10 minutes longer. Do not use rack in broiler so fish will cook in its own gravy and be more juicy.
