BAKED STUFFED FILET OF SOLE OR
FLOUNDER
 
6-8 slices filet
1 sm. can shrimp, drained and finely chopped
1 egg
1 tsp. parsley
2 tsp. onion, minced
Bread crumbs
1/2 c. dry white wine
Juice of 1 lemon
3 tbsp. butter, melted

Wash and clean filets. Rub each slice with lemon juice, salt, and pepper. Mix together shrimp, egg, parsley, onion, and enough bread crumbs and white wine to make a thick paste of spreading consistency. Spread each filet with the mixture. Roll up and place seam down in baking dish. Pour melted butter and remaining wine over all. Bake in covered dish at 350 degrees for 25 minutes. Remove cover, sprinkle with paprika and bake 5 minutes longer.
