STUFFED FILET OF SOLE 
1 lb. filet of sole
1/3 c. cooked rice
1/3 c. chopped mushrooms
1/3 c. shallots
1/2 c. lemon juice (separated 1/4 c. and 1/4 c.)
Broccoli, chopped, cooked
2 tbsp. butter
Paprika and pepper
1/2 c. Cheddar cheese

Saute shallots, mushrooms and cooked broccoli in butter. Remove from stove. Add 1/4 cup lemon juice, rice, pepper and 1/2 cup Cheddar cheese. Put stuffing into fish and roll up. Secure with toothpick. Melt more butter and add remaining 1/4 cup lemon juice. Pour over fish, sprinkle with paprika. Bake at 350 degrees until fish flakes.
