SOLE FILETS WITH CHEESE AND SPINACH | |
6 tbsp. butter 4 egg yolks 1/2 tsp. salt 1/2 tsp. paprika 2 tbsp. salad oil 1/2 lb. sharp cheese, shredded 4 bunches fresh spinach, trimmed, chopped and cooked or 2 (10 oz.) pkgs. frozen chopped spinach 8 lg. filet of sole Juice of 1 lemon salt and pepper Melt butter. Beat egg yolks with salt and paprika. Beat in salad oil a little at a time. Beat in melted butter little at a time. Stir in 1/2 the cheese. Combine mixture with spinach. Pour 1/3 of spinach mixture in bottom of shallow baking dish (9 inch). Season both sides of fish with lemon, salt and pepper. Roll up filets and arrange each roll, loose side down, on top of spinach mixture. Pour remaining mixture over fish. Top with remaining cheese. Bake at 400 degrees for 20 minutes. |
