BREAKFAST CASSEROLE 
1 lb. good quality pork sausage, browned and drained
1 can cream of celery soup
2/3 c. milk
1 ample c. diced, cooked potatoes, boil in skin then peel
1 c. cubed Velveeta cheese

Mix everything together and put in flat casserole dish. Sprinkle with bread crumbs and grated Cheddar cheese. Bake 30 to 40 minutes at 350 degrees. Keeps well in warm oven for delayed serving. Serves 8.
