BREAKFAST CASSEROLE 
12 hard cooked eggs, slices
2 lb. bacon
3 c. crushed potato chips
1/4 c. chopped onion
4 tbsp. butter
4 tbsp. flour
3 c. milk
1/2 lb. grated cheddar cheese

Cook onion in butter; blend in flour well. Add milk; cook until thickened. Add cheese, stir until it melts. Fry bacon until crisp; then break into crumbles.

In deep dish layer 1/2 eggs, 1/2 bacon, 1/2 chips and 1/2 cheese sauce. Repeat, using remaining ingredients. Cover; bake at 350 degrees for 40-45 minutes. May be served immediately, but is better if served the next morning. If refrigerated, reheat until hot and bubbly, about 30 minutes at 300 degrees. This is favorite for company. Serves 12.
