MOLASSES CAKE | |
1 egg, beaten 1/3 c. sugar 1/2 c. molasses 1/4 c. shortening, melted 1/2 c. chopped nuts 2 c. flour 1 tsp. salt 1 tsp. baking soda 3/4 tsp. baking powder 1 1/2 tsp. dry grated lemon peel 2/3 c. sour milk 2 c. finely diced zucchini Mix egg, sugar, molasses, and shortening; add nuts. Mix together flour and other dry ingredients and lemon peel. Add alternately with sour milk. Stir in chopped zucchini. Bake in greased and floured 9 x 13 inch pan at 350 degrees for 35 to 40 minutes. This is a moist cake. Good served with whipped cream or sweetened cream cheese frosting. |
