BAKED APPLE PUDDING 
1/3 c. butter
1 egg
1 tsp. baking soda
1/4 tsp. nutmeg
2 c. fresh apples, grated
1 c. sugar
1 c. flour
1/4 tsp. cinnamon
1 tsp. vanilla

Combine butter, sugar and egg. Beat until light. Gradually blend in combined flour, baking soda and spices. Stir in vanilla and apples. Bake in ungreased 8 x 8 inch pan at 350 degrees for 35 minutes.

Serve warm with ice cream or frozen yogurt.
