SCALLOPED POTATOES WITH SAUSAGE | |
1 lb. link sausage 5 c. thinly sliced raw potatoes 1 onion, sliced 5 tbsp. flour 2 1/2 tsp. salt Dash of pepper 2 c. hot milk (not boiled) Cook sausage in skillet very slowly for about 10 minutes, do not brown. Combine potatoes, onion, 4 tablespoons of the flour, salt, pepper, and 4 tablespoons sausage fat in large bowl, mixing until each slice of potato has come in contact with flour, seasoning and fat. Put potatoes in 2 quart casserole. Pour milk over all and sprinkle with remaining flour. Arrange sausage on top. Bake in moderate oven for about 1 1/2 hours. |
