CUSTARD CRUNCH PIE | |
1 unbaked pie shell 1 c. sugar 2 tbsp. flour 1/8 tsp. salt 3 eggs 1/4 c. melted butter 1/2 c. chopped walnuts or pecans 1 c. mincemeat 1/4 c. raisins, optional Mix all ingredients and place in pie shell. Bake at 400 degree oven for 15 minutes. Lower oven temperature to 325 degrees and bake for 30 minutes. DIETITIAN'S NOTE: Although mincemeat is made primarily from fruits, it is surprisingly high in sodium. Omit the 1/8 teaspoon salt, use 3/4 cup egg substitute, 2/3 cup sugar and 1/4 cup melted butter flavored butter. This recipe will still be packed with calories, fat and sodium so enjoy a small portion of this crunchy concoction bite by bite. |
