ALMOND SHORTBREAD COOKIES 
1 c. softened butter
1 c. sugar
1 egg
1 tsp. almond extract
2 c. flour
1/2 c. sliced almonds
1 tbsp. sugar
1/4 tsp. cinnamon

Combine softened butter with sugar. Separate egg. Add the yolk to butter and sugar with almond extract. Add flour. Mixture will be stiff. Spread on 10 x 15 1/2 inch jelly roll pan. Dough will be thin.

Beat egg white until foamy and spread over dough. Sprinkle with sliced almonds. Combine sugar and cinnamon. Sprinkle over almonds. Bake at 350 degrees for 20 minutes. Cool 10 minutes and cut into squares.
