LORETTA BIANCHI'S ITALIAN
BISCOTTI
 
1/2 c. butter
1 c. sugar
3 eggs
3 c. sifted flour
3 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla
1 tbsp. anise seed, crushed
2 tbsp. grated lemon rind
2 tbsp. grated orange rind
1 c. chopped almonds or walnuts

Cream butter and sugar. Add eggs one at a time until fluffy. Sift flour, baking powder and salt. Stir into butter mixture until thoroughly mixed. Add remaining ingredients and stir.

Divide dough into 3 parts. Shape part into roll 1 1/2 inch diameter. Place on cookie sheet and flatten top slightly. Bake for 20 minutes. Remove from oven and cut into 3/4 inch slices. Return to oven, cut sides up and brown another 10-15 minutes. Cool on wire rack. Bake at 350 degrees. Makes 60 cookies.
