EGGPLANT AND TOMATOES 
1 eggplant, peeled & sliced
Tomatoes, peeled & sliced
1/2 tsp. salt
1/4 tsp. pepper
Grated cheese (Swiss, Parmesan or your favorite)
Bread crumbs
Butter

Soak eggplant in salted water for 1 hour; drain. Place layers of eggplant and tomatoes in buttered baking dish with seasonings and grated cheese between layers. Sprinkle top with bread crumbs. Dot with butter. Bake in 350 degree oven for 30 minutes.
