SMOKED TURKEY AND WATERCRESS
SANDWICHES
 
8 pita bread rounds
1 1/2 lbs. sliced smoked turkey
2 watercress bunches, trimmed
8 plum tomatoes, sliced
1 c. walnuts, chopped
Curried Apricot Mayonnaise

Preheat oven to 350 degrees. Place pita bread rounds on baking sheet and heat in oven until just warm, about 5 minutes. Cut rounds in half, forming pockets. Place in napkin-lined basket and keep warm.

Arrange turkey, watercress and tomatoes on platter. Place walnuts and mayonnaise in bowls; allow diners to assemble their own sandwiches. 8 servings.

CURRIED APRICOT MAYONNAISE:

1 1/2 c. mayonnaise
1/4 c. apricot jam
1/2 tbsp. curry powder

Whisk ingredients in medium bowl to blend well. (Can be prepared 2 days ahead. Cover and refrigerate.) Makes about 1 3/4 cups.
