SMOKED TURKEY APPLE BISCUIT BAKE
4 oz. smoked turkey
2 apples; cored, sliced, and peeled
2 apricots (dried), cut into small cubes

Arrange in layers in bottom of a pyrex or other baking dish. Mix:

1/4 c. water
1 tsp. maple syrup

Pour mixture over turkey and fruit. Cover with lid. Bake at 400°F for 15 to 20 minutes. Remove from oven. Microwave on high for 3 minutes to reheat. Meanwhile, prepare biscuits:

1/2 c. whole wheat pastry flour
3/4 tsp. baking powder
1/4 to 1/2 tsp. onion powder

Mix dry ingredients and cut in 4 teaspoons butter with pastry blender. Add poppy seed (a generous amount) and 1/4 cup of milk. Stir only until blended.

Drop batter over the tops of apples in 3 balls or lumps.

Bake at 400°F for 12 to 15 minutes or until lightly golden brown.

Serve with salad.

Since microwave ovens vary in power, you may need to adjust your cooking time.
