SMOKED TURKEY 
1 c. tender quick
1/4 c. pickling salt (scant)
5 tsp. Liquid Smoke

This is for each gallon of water. Place either a frozen or fresh turkey in large pail (5 gallon plastic pail). Add enough brine to cover turkey - usually takes 2 gallons of brine. Cover pail and place in cool place or refrigerator for 1 week. Remove and wash turkey with cold water.

Set oven to 300-325 degrees. Put turkey in roaster and bake for 5-6 hours or until tender. Remove from bones. Put white meat in plastic bags and dark meat in plastic bags. Freezes good. Use for sandwiches or hot dishes.

I just used a few turkey pieces and a plastic ice cream pail. Kept in the refrigerator for a week and baked it. Very good! I will definitely try this again!!! Next time, maybe just a turkey breast and an ice cream pail in frig.
