FRESH MINESTRONE 
Any or all of the following ingredients may be used.

1 onion, chopped
Pinch of oregano
1 sm. potato, peeled & diced
1/4 lb. green beans, diced
1 sm. tomato, cut in chunks
1 tbsp. snipped parsley
1/2 c. fresh cut corn
2 okras, cut in pieces
1/4 c. cabbage, shredded
1 garlic clove, crushed
1 tsp. butter
1 sm. carrot, diced
1 sm. stalk celery, cut in small slices
1/2 c. sliced mushrooms
1/2 c. zucchini, sliced
1/2 c. broccoli, cut in chunks
1/4 c. turnips, peeled, diced
A few lima beans
2 c. chicken stock

Combine onion, garlic and oregano with butter. Cook over low heat until onion is golden. Add 2 cups chicken stock, bring t boil and add vegetables in order of firmness. Lower heat. Simmer until vegetables are tender, but still crisp. Garnish with parsley. (You may leave out the cabbage family vegetable.)
