FRESH MUSHROOM SOUP 
1/2 to 1 lb. fresh mushrooms, cleaned and sliced
1/2 c. chopped onion
1/2 to 1 stick butter
2-4 tbsp. flour
2 c. chicken broth or 1 c. half-and-half
1/8 tsp. pepper to taste
Fresh parsley to decorate

In large pan, saute mushrooms and onion in butter. Allow to cool. Add remaining ingredients and simmer for 20 minutes. Check taste and season. Serve.

Variation: Add flowerettes of broccoli and 1/2-inch of stem below, cut into small pieces, to make Broccoli Soup.
