SUMMER SAUCE 
4 lb. plum tomatoes
Olive oil
2 tsp. minced garlic
2 med. onions, sliced
1/2 lb. mushrooms, sliced
Rosemary to taste
Black pepper to taste
Red wine to taste

Sauce garlic, onions and mushrooms in olive oil. Quarter tomatoes and add to garlic mixture. Cook on medium heat about 20 minutes. Add remaining ingredients as seasonings to taste. Serve over pasta. Serves 4. Green peppers and scallions may also be added to sauce.
