SUMMER TOMATO SAUCE FOR PASTA 
4 lg. ripe tomatoes, peeled, seeded, cored & chopped
1 green pepper, halved, seeded & diced
1/2 cucumber, pared, seeded & chopped (optional)
1 tsp. salt
1/2 tsp. pepper
1/3 c. chopped green onions
1 clove garlic, minced
1/2 c. olive or vegetable oil
1/4 c. finely chopped parsley
12 oz. pasta, sm. shells, fusilli, ziti or the like

Combine all ingredients except pasta. Let stand at room temperature 1-2 hours for flavors to blend (covered). Cook pasta according to directions until tender. Drain and transfer to warm bowl. Add tomato mixture and toss. Serve with warm crusty French bread. Use only recipe summer tomatoes for this recipe.
