CORN MUFFINS ON STICKS 
2 c. cornmeal
3 tsp. baking powder
1 tsp. salt
1 tbsp. sugar (optional)
1 egg, beaten
1 1/4 c. milk
3 tbsp. soft or melted shortening

Sift together cornmeal, baking powder, salt and sugar. Mix together egg, milk and shortening; add all at once to dry ingredients. Stir just to moisten and blend all ingredients. Pour batter into hot greased muffin or corn-stick pans, filling about 2/3 full. Bake at 450 degrees about 15-20 minutes. 6 servings.
