PUMPKIN - PECAN WAFFLES 
2 1/4 c. flour
4 tsp. baking powder
1 tsp. cinnamon
3 eggs, separated
1 3/4 c. milk
1/2 c. vegetable oil
1/2 c. pumpkin
3/4 c. pecan pieces

Sift together dry ingredients; set aside. Beat yolks lightly with fork, add milk and oil. Mix well, stir in pumpkin. Stir pumpkin mixture into dry ingredients. Stir to mix. Beat egg whites to stiff peaks. Fold into pumpkin batter. Pour about 1/2 cup batter into hot waffle iron. Sprinkle with pecans.
