ZUCCHINI SEAFOOD CASSEROLE 
4 c. zucchini, peeled and sliced 1/4 inch
1 1/2 c. Bisquick baking mix
1 1/2 c. shredded processed sharp American cheese
1 c. chopped onion
1 (6 1/2 oz.) can crab meat, drained and cartilage removed or
1 (6 1/2 oz.) can tuna, drained
1/2 c. vegetable oil
3 eggs, beaten
1 tsp. dried oregano
1 tsp. salt
1/2 tsp. pepper

Heat oven to 400 degrees. Grease baking dish (12 x 7 1/2 x 2). Mix all ingredients together. Spread evenly into casserole. Bake uncovered until golden brown and inserted knife in center comes out clean, 25-30 minutes. Garnish with thinly sliced zucchini.
