ZUCCHINI SQUASH CASSEROLE 
1 med. size zucchini squash
1 lb. ground chuck
1 lg. onion, chopped
1 pod jalapeno pepper, chopped (optional)
1 c. Minute Rice

Saute beef, pepper and onion with lemon pepper, salt and pepper to taste. Put slices of butter in casserole dish. Layer of zucchini sliced thin crosswise. Mix rice with meat mixture. Layer meat mixture over squash and continue layering until all used and squash is on top. Cook 350 degrees until squash is tender about 30 to 45 minutes. Grated cheese on top and place back in oven until cheese melts.
