UNCLE TED'S ZUCCHINI AND SQUASH CASSEROLE | |
Olive oil Sweet Italian sausage, sauteed 2 green peppers, sliced Garlic salt and pepper 2 to 3 zucchini, peeled, sliced and quartered 2 yellow squash, cut into chunks 1 pkg. Birds Eye Italian vegetables 1 pkg. Birds Eye Chinese vegetables 1 can mushroom stems and pieces After sauteing sausage in heavy skillet remove from pan. Saute green peppers and onion (add extra oil if necessary). Season with garlic and salt and pepper. Mix zucchini and squash and add to pepper mixture cooking slowly for several hours, uncovered. Add frozen vegetables and mushrooms and heat through slice sausage into small pieces and stir in simmering until warmed through. This is great for buffet. |
