SANDBAKKELS 
1 c. shortening
1 c. sugar
1 egg, beaten
1 tsp. almond extract
2 1/2 c. flour

FILLING:

Double this.

1 egg, beaten
1/3 c. sugar
1/4 tsp. salt
1/3 c. dark corn syrup
1 scant tbsp. melted butter
1/2 tsp. vanilla
1/3 c. finely diced pecans

Mix the cookie ingredients well and press into small sandbakkel tins. Fill 2/3 full with the filling. Put the tins on a cookie sheet to bake. Bake at 350 degrees for 20 minutes. Makes about 90 sandbakkels.
