SALMAGUNDI BAKE 
3/4 c. uncooked long grained rice
1 1/2 tsp. salt
Pepper
2 (8 oz.) cans tomato sauce
1 c. hot water
1 c. chopped onions
1/2 c. chopped green peppers
1 lb. ground beef
1 tsp. salt
1 (12 oz.) can whole kernel corn, drained
2-3 tsp. chili powder
4 slices bacon

In ungreased 2 quart casserole. Layer rice. Sprinkle with 1 1/2 teaspoon salt and pepper. Pour over 1 can tomato sauce and hot water. Add a layer of onion, green pepper, then add layer of ground beef. Sprinkle with 1 teaspoon salt. Top with layer of corn. Add chili powder to remaining can of tomato sauce. Pour over corn. Top with bacon slices. Cover and bake at 375 degrees for 1 hour, uncover and bake 15 minutes longer. Garnish with tomato slices, green pepper rings and crisp bacon curls. Serves 6.
