SHERRY-ROASTED DOVES 
14-16 doves
Salt
Pepper
Flour
1/2 c. salad oil
1/2 c. chopped green onions
1 1/2 c. water
1 c. sherry
1/4 c. chopped parsley

Season doves with salt and pepper. Roll in flour. Place in oil in a heavy roaster. Bake at 400 degrees until brown. Add onions, water and sherry; cover. Bake until tender, baste with sherry occasionally. Add parsley to gravy just before serving. Serves 8-12.
