UPSIDE DOWN MEATLOAF 
1/2 c. brown sugar
1/2 c. catsup
1 1/2 lbs. ground beef
3/4 c. milk
2 eggs, beaten
1 1/2 tsp. salt
1/4 tsp. pepper
1 sm. onion, chopped
1/4 tsp. ginger
3/4 c. crushed cracker crumbs

Butter a 9x5 inch loaf pan. Press the brown sugar in bottom of pan and spread catsup over the sugar. Mix all remaining ingredients together and shape into a loaf. Put on top of catsup. Bake at 350 degrees for 1 hour. Turn upside down to serve. Serves 6.

Variation: A little vinegar or lemon juice may be added to catsup to give sauce some tartness.
