TEX-MEX MEAT LOAF 
1 1/2 lbs. lean ground beef
1 (16 oz.) can pinto beans, rinsed and drained
1 1/2 c. Pace picante sauce
1 med. onion, chopped
1 clove garlic, minced
1/2 c. dry bread crumbs
2 eggs
3/4 tsp. salt
1 1/2 tsp. ground cumin
2 tbsp. brown sugar

Combine meat, beans, 1 cup of the picante sauce, onion, garlic, bread crumbs, eggs, cumin and salt; mix well. Press into 9x5 inch loaf pan. Bake at 350 degrees for 1 hour.

Combine remaining 1/2 cup picante sauce and brown sugar, mix well. Spread over surface of meat loaf. Continue baking 15 minutes; let stand 10 minutes. Serve with additional picante sauce. Serves 6.
