TEXAS PECAN OATMEAL MUFFINS 
1 c. quick cooking oats
1 c. buttermilk
1/2 c. butter
3/4 c. brown sugar
2 eggs
1 c. flour, sifted
1 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda
1/2 c. pecans, chopped

Soak oats in buttermilk for 1 hour. Cream butter and brown sugar together. Add eggs and beat well. Add flour, baking powder, salt and soda. Fold in mixing well. Fill greased muffin pans 2/3 full. Bake in 400 degree oven for 20 minutes. Makes 12 muffins.
