OATMEAL PECAN CAKE | |
1 1/2 c. boiling water 1 c. oats (regular rolled oatmeal cereal, not instant) 1/2 c. butter (1 stick) 1 tsp. cinnamon 1 c. brown sugar 1 c. granulated sugar 2 eggs 1 1/3 c. flour 1 tsp. baking soda 1/4 tsp. salt TOPPING: 6 tbsp. melted butter 1/2 c. sugar 1/4 c. evaporated milk 1 c. chopped pecans Pour boiling water over oats. Add butter and let stand until butter is melted. Stir in sugar, eggs, and dry ingredients. Turn into well greased cake pan about 9 x 13 inches and bake at 350 degrees for 30-35 minutes. While cake is still warm, spread topping and place under broiler until it bubbles. |
