SOUR CREAM CHICKEN ENCHILADAS 
4 chicken breasts
1 carton sour cream
2 cans cream of chicken soup
1 med. onion, diced
1/2 c. salsa or picante sauce
2 1/2 c. grated cheddar cheese
1 pkg. flour tortillas

Mix chicken, sour cream, chicken soup, onion and salsa or picante sauce. Tear tortillas in pieces and line the bottom of a greased oblong pan. Put a layer of chicken mixture on top of tortillas. Cover with a layer of cheddar cheese. Continue process until chicken mixture is all used. Bake at 350 degrees until cheese is melted and it is heated through.
