KIM'S TEX-MEX CHICKEN MELTS
Great for parties!!

1 large loaf garlic bread (I use Cole's)
1 (12 oz.) can "premium chunk" chicken, drained
1 cup mayonnaise
1 pkg. Old El Paso taco seasoning mix (its the best!)
1 cup Mexican blend cheese
1 large sliced tomato (optional)

Mix canned chicken (try to shred chicken as much as possible, so it will go further), mayonnaise and taco seasoning in medium bowl. Spread on top of garlic bread (both sides). Place tomatoes on top of mixture if you choose, or skip the tomatoes and place cheese on top. Regardless, make sure to sprinkle the cheese lastly.

Place in 350°F oven for however long it takes your bread to bake. Broil on high for 2-3 minutes to crisp bread and brown cheese. Let stand 3 minutes and then cut into sections with a pizza cutter. Enjoy!
