BAKED ENCHILADAS 
2 lbs. ground beef
1 c. chopped onions
1 sm. can red enchilada sauce
1 lg. jar salsa or picante sauce
1 tbsp. chili powder
Chopped jalapenos (to taste)
Large flour tortilla shells
Grated cheddar or Monterey Jack cheese

Brown ground beef in skillet with 1/3 of the onions and chili powder. In large bowl mix together beef, jalapenos, onions, and 1 cup of cheese. Use a large baking dish; just barely cover bottom with enchilada sauce. Spoon meat mixture onto tortilla shells; roll up and lay fold down in baking dish. Pour salsa (however much you want) over top. Spread cheese over top, bake at 450 degrees for approximately 20 minutes or until cheese is thoroughly melted.
