ENCHILADA BAKE | |
1 lb. ground beef or 2 c. cooked chicken, diced 1/2 c. onion, diced 1 pkg. tortilla chips 1 can cream of mushroom soup 1 can enchilada sauce (mild) 1 soup can milk 2 pkg. grated Cheddar cheese or four-cheese Mexican cheese mixture (it may not take all of the cheese) Brown ground beef and onion, stirring to crumble. Crush some of the chips and put a layer in a greased 9 x 13-inch pan. Layer on all of the ground beef and onion. Top with about half of the cheese. Top with more crushed chips. Mix together the soup, enchilada sauce and the can of milk. Pour over the casserole and top with more cheese. Bake at 350°F until bubbly (about 30 to 45 minutes). |
