BAKED STUFFED SALMON DOWN HOME STYLE | |
1 lg. salmon, 2-3 lb. 1 tbsp. butter Salt and pepper 1 - 1 1/2 c. bread crumbs 1 clove garlic, minced 1 orange 1 lemon 1 c. milk 6 strips bacon Clean salmon; cut off head and tail and fins. Wash clean and dry with paper towels. Rub butter inside cavity and on outside of salmon. Mix salt, pepper, bread crumbs, garlic and the juice of the orange and the lemon; add milk. Stuff fish and lay in baking pan; put strips of bacon on top of fish. Bake 30-40 minutes in a preheated 350 degree oven. Serves 3-4. Variation: Mix 1/2 pound crabmeat with a little horseradish, 1/2 cup salad dressing, 3 diced onions, salt, pepper and diced pickles. Serve over salmon as a sauce. |
