GARDEN RELISH 
4 c. chopped cucumbers
4 c. chopped cabbage
4 c. chopped onions
2 sweet red peppers, chopped
2 green peppers, chopped
1/2 c. salt
4 c. vinegar
5 c. sugar
2 tbsp. dry mustard
2 tbsp. mustard seed
1 tsp. celery seed
1 tsp. turmeric
3/4 c. flour

All vegetables should be chopped fine. Sprinkle with salt and let stand overnight. Drain well. Bring 3 cups vinegar and all of seasonings to a boil, approximately 12 minutes. Mix flour with remaining cup of vinegar. Add to boiling vinegar mixture and cook until thick, about 5 minutes, stirring several times.

Add drained vegetables; bring just to the boil, about 10 minutes. (Add a few drops of green food color, if desired.) Seal in hot sterilized jars. Process 20 minutes in water bath.
