MEXICAN CORNBREAD 
1 lb. ground beef
1 onion, chopped
1 can green chiles, chopped
1 pkg. taco seasoning
1 can cream style corn
1 c. shredded Cheddar cheese
1 box Jiffy cornbread mix
1 egg
1/3 c. milk

Brown meat with onions; drain. Add drained green chiles. Also add taco seasoning and water according to package directions. Let simmer for about 15 minutes. While simmering, preheat oven according to "Jiffy" instructions.

Grease 2 to 3 quart casserole dish. Mix cornbread and add the can of corn. Place 1/2 of cornbread mixture in dish. Top with all of meat mixture. Then layer with Cheddar cheese. Cover top with remaining cornbread mixture. Bake in a preheated oven approximately 25 minutes or until golden brown. Serve with a salad (4-6 servings).
