APPLE PUDDING CAKE 
2 c. flour
2 c. sugar
1/2 c. melted shortening or vegetable oil (oil is best)
2 eggs, beaten
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
1 tsp. vanilla
4 1/2 c. apples, do not peel, core, and dice

Sift together flour, soda, cinnamon, and salt. Add remaining ingredients. Stir to moisten all dry ingredients. Pour into 9 x 13 inch pan (batter is very thick). Bake at 375 degrees until browned and apples are done. Approximately 1 hour. Serve with whipped cream or ice cream.
