CRANBERRY FRUIT MUFFIN 
2 c. sifted flour
1 c. sugar
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
Juice & rind of 1 orange
1 egg, well beaten
2 tbsp. oil
1/2 c. chopped nuts
2 c. cranberries, halved

Sift dry ingredients. Combine juice, grated rind, oil and enough water to make 3/4 cup liquid. Add beaten egg to dry ingredients. Fold in nuts and halved cranberries. Spoon into muffin cups (oiled or lined) 3/4 full. Bake at 350 degrees.
