FRUIT MUFFINS 
2 c. flour
3 tsp. baking powder
1 egg
3/4 c. milk
1/4 c. sugar
1/2 tsp. salt
1/4 c. butter, melted
1 c. fruit cocktail (canned), drained.

Put the flour, sugar, baking powder and the salt into a large mixing bowl and stir well. Add the melted butter, milk and fruit cocktail and stir again lightly and quickly until it's just mixed. Fill greased muffin pans about 2/3 of the way full and bake in 400 degree oven for about 25 minutes. Makes 12 muffins.
