SWEET POTATO CASSEROLE 
4 c. mashed sweet potatoes
1 tsp. vanilla
2 eggs, beaten
1 c. sugar
1/2 c. melted butter

TOPPING:

1 c. brown sugar
1/3 c. flour
1 c. chopped pecans
1/3 c. melted butter
Miniature marshmallows (optional)

Mix first 5 ingredients and put in greased 9x13 inch baking dish. Mix all topping ingredients and sprinkle on top. Bake at 350 degrees 30 minutes. During the last 10 minutes of baking, top with miniature marshmallows.
