CRACKLING CORN BREAD 
1 1/2 c. cornmeal
2 tbsp. flour
3 tsp. baking powder
1/2 tsp. salt
1/2 tsp. sugar
1 well beaten egg
1 1/4 c. milk
1 1/4 c. cracklings

Combine meal, flour, baking powder, salt and sugar in a bowl then add the egg and milk. Mix just to moisten the dry ingredients then add the crackling. Bake in a hot well greased skillet at 450 degrees for 20 minutes.
