FRUIT AND NUT BREAKFAST BARS 
3 c. quick cooking oats
2 c. flaked coconut
1 c. sliced almonds
1/2 c. coarsely chopped walnuts
1 c. golden raisins
1/2 c. coarsely chopped pitted dates
1/2 c. chopped dried apricots
1/2 c. unsifted flour
1/2 tsp. salt
3 eggs, slightly beaten
3/4 c. honey
1/3 c. cooking oil

Sprinkle half of the oats, coconut, almonds, and walnuts in a 12 x 8 x 2 inch (2 quart) glass baking dish. Microwave (High setting) 8 minutes or until toasted, stirring every 3 minutes. Repeat with remaining oats, coconut, almonds and walnuts. Cool well.

Combine oat mixture, raisins, dates, apricots, flour and salt i bowl. Stir in eggs, honey and oil, mixing well. Press into 2 greased 8 inch square glass baking dishes. Place pieces of foil over the corners of each dish. Place one dish in microwave oven on an inverted saucer.

Microwave (High setting) 6 minutes, rotating dish 1/4 turn every 2 minutes. Cool directly on counter. Repeat with remaining dish. Cut into 2 inch squares. Makes 32 bars or 16 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
