4 med. sweet potatoes or yams
1/2 tsp. grated orange rind
1/2 c. orange juice
2 tbsp. apple juice concentrate
1/4 tsp. cinnamon

Steam potatoes and peel. Mash all ingredients together. Bake in casserole dish, covered, for 25 minutes at 350 degrees.
